This is my go to dinner when I need a little comfort food. I start with a tradiditional bechamel sauce [here] but usually do not follow it exactly [ I omit the onion and swap the whole milk for fat free and then add a healthy ton of grated pecarino romano cheese] Next, I add my favorite pasta shape of the moment [right now it is orecchiette] and toss it with whatever fresh vegetables I have around. Tonight's was roasted red peppers and basil with Italian parsely from my mini garden. Lastly I top with //more// pecarino and sometimes will really go over the top and add bacon or pancetta. Yum...
