Roasted Tomatoes

 

I have discovered the simple pleasure of roasting tomatoes.  This summer I have eaten these almost every day because they are so simple to make, healthy, and full of flavor! I use my counter top sized oven on the broiler setting and they come out slightly charred and delicious in about 15 minutes.

A handful of washed grape tomatoes
A drizzle of olive oil
A handful of fresh thyme
A sprinkle of kosher salt
A sprinkle of fresh cracked black pepper
One small chopped shallot

Preheat counter top oven to the broil setting. 

[1] Chopped the shallot in thin stripes. Slice the grape tomatoes once in half.
[2] Place the sliced shallot and tomatoes on a foil covered baking sheet.
[3] Drizzle olive oil over the shallot and tomatoes and toss gently with your hands. Wash hands.
[4] Sprinkle tomatoes with fresh thyme, salt, and pepper.
[5] Place in the oven for about 15 minutes at 350 degrees or your low broiler setting.


I then like to cool the vegetables slightly and toss them in pasta dishes or in a fresh field greens salad. Enjoy!
